CANARY GOFIO: what is it, and what are its nutritional properties?

If you’ve ever had a visit to the Canary Islands, you’re well aware of what it is. Gofio is used extensively there and is one of the traditional ingredients in recipes. If you got lost there, we would love to introduce you to it.

Have you ever heard of it?

Gofio is roasted cornmeal. It is a product with special nutritional properties. It contains a lot of B vitamins (B1, B2, B3), as well as vitamin C and D.

Not only are Gofi flours full of vitamins, but they are also rich in minerals such as phosphorus, calcium, sodium, zinc, potassium, iron. This flour stands out from all others because it is one of the most mineral-rich. It is also rich in Omega 6.

Due to its high nutritional power, it became the staple food of the Guanches (Canary Aborigines) and was very important in times of famine. In the Canary Islands, it is still in every home, and its use is quite diverse. Before the conquest of the islands, the Aborigines mixed Gofio with salt and water to obtain dough balls called Pellas de Gofio. They are still used daily as a substitute for bread during meals. The same Pellas de Gofio is mixed with nuts and honey or ripe bananas as a snack or dessert.

Gofio powder is used to mix with soups or sauces. Children usually use Gofio with milk and drink it like cocoa, while adults mix it with coffee.
